Beef tenderloin with blackberry and merlot reduction, sitting on a bed of roasted asparagus and garlic rosemary red potatoes. It looks much harder than it is. The recipe is from Sandra Lee's light cookbook. I was a bit weary when we bought our first Sandra Lee cookbook (the 20 minutes or less one), but we have used it more than any other cookbook we own. This also took about 20 minutes to make and was absolutely delicious. If I have time tomorrow, I'll post this recipe. If anyone has been on the fence about her cookbooks, I'd suggest checking them out of the library. If you purchase them, however, you won't regret them. Cheap, easy, and all of them have been great.
